Goat Cheese season is over for me but now it is time to make some new Cows milk cheeses I have been wanting to make

The old stand by Cheese curds, will have to wait til Jan 2nd to get some raw milk but maybe tomorrow I will try my hand at a cheddar....On another note I finally made a decent feta in oil that isn't so bitter, still not perfect yet but will work on it, mostly it is the feta I think I have the right flavors of herbs,olives,dried tomatoes....
